DRIP COFFEE MAKERS!

Most Americans use a drip coffee maker to brew coffee. With drip coffee makers, the ground coffee is placed in the upper filter and hot water is poured or dispensed over it. As the hot water passes through the grounds it picks up the oils and flavors, passes through the filter and drips into the carafe below. This technique uses gravity for brewing.

Electric drip coffee makers automatically heat the water, brew the coffee and usually have a warming plate to keep the coffee hot. However, the warming plate becomes an issue as it continuously cooks the coffee and degrades the taste. There are some drip coffee makers that attempt to automatically adjust and manipulate the warming plate temperature to eliminate this problem. Generally, just make what you will consume.

Proper brewing temperatures for the drip coffee maker should be around 200 degrees. Optimized flavor extraction occurs at 200 degrees. Temperatures ranging below this can result in a muddy taste. Higher than 200 degrees can result in a bitter taste.

Drip Coffee Makers

It is easy to test the temperature coming out of a drip coffee maker. Simply take an "oven" stick thermometer (turkey) and allow it to remain in the stream of water dripping out of the basket (with filter, but no coffee grounds.) DO NOT remove the basket to test the hot water being dispensed! After but a few minutes you will have a good gauge of the temperature coming out of your drip coffee maker. We recommend testing your new drip coffee maker immediately. If your new drip coffee maker is below the optimum water temperature, chances are this will never change, return it.

Speed of the brew cycle is also important for optimal coffee flavor and taste. It is generally thought that hot water in contact with the ground coffee for more than 8 to 10 minutes can cause bitter flavors.

For those using manual drip methods or non-automated glass drip coffee makers, keep the water temperature just below boiling and of course optimally around 200 degrees. The temperature of the water is very important to this technique.

How To Use A French Press or Coffee Press

Using a french coffee press is not just a technical application, but very much an art.  This How To Use French Press Primer will cover basic techniques that will allow plenty of room for your artistic application.  Please feel free to modify any of the French Press recommendations to suit your taste buds.  The basics of this french press technique should not be altered though.  First, a little review on what a French Press is.

Currently, French Presses come in various sizes and material. Some are made from borosilicate glass, some are plastic, while others are stainless steel French Presses.  All perform basically the same when coffee is immediately consumed, but a stainless steel french press will hold the heat longer if it is insulated.  This can cause the coffee to steep longer if not consumed in 1 application.  Just choose a french press that will provide enough French Pressed Coffee to consume in a sitting from one pour.  If more is needed then rinse the unit with hot water and begin the process again.  Remember that allowing the grounds to continue steeping in the hot water will cause bitterness to the flavor regardless of the type of French Press.

Recommended Technique for How to Use a French Press:

Generally it is NOT recommended to use soap and water to clean your french coffee press.  See this link for the proper technique to cleaning a coffee carafe. However if you are so inclined to use soap and water, follow this how to use a french press process without loosening the plunger.

French Press Use Recommendations:

 

  • Use a good Burr Grinder that will grind the coffee beans to consistent coffee grind sizes (particle sizes) and grind to a medium to course size for the French Press.
  • Use fresh and filtered water at approximately 200 degrees*.
  • Only use a separate pot for boiling water.

 

  1. Boil Water, enough for your coffee, plus about 1 1/2 Cups more for Cleaning and Pre-heating French Press Coffee Maker and pre-wetting your grounds.  Remove the boiling water pot from heat and the temperature will fall to around 200 degrees*.
  2. Slightly loosen the screen of the French Press's plunger by turning it counter clockwise (Some will take this opportunity to completely disassemble wipe and rinse the French Press Plunger then reassemble to loosened state.).
  3. Pour a little less than a cup of the hot water into the french coffee press and insert the loosened plunger to just below the water line.  Make sure the lid is in place. Carefully swirl the hot water to rinse out the inside of the pot and screen.
  4. Carefully remove the plunger and pour out the water, then turn screen filter clockwise to tighten (Some will take this opportunity to completely disassemble wipe and rinse the French Press Plunger).
  5. Insert the correct amount of grounds for your needs and pre-wet these grounds for about 30 seconds to 1 minute with the 200 degree heated water, stir.
  6. Pour remaining hot water into the french press to the volume required. Kept at approximately 200 degrees.
  7. If using a glass or borosilicate glass french press do not use a metal spoon to stir the slurry as it can shatter the glass.  Long plastic spoons, wood spoons or wood chop sticks are recommended for stirring.  Gently stir the coffee grounds and hot water mixture.
  8. Insert warmed screen plunger to just below touching the floating coffee grounds or water surface.  For a small 2 cup pot allow the coffee to steep for two to four minutes, larger pots allow coffee grounds to steep for around 4 minutes
  9. Depress plunger carefully and fully into french press and pour.

*Remember that the boiling point of water drops as atmospheric pressure increases (eg., Higher elevations increase vapor pressure, the boiling point of water drops.)  This is one reason why recipes are altered for higher elevations.

You should enjoy coffee and here are some reasons why! Coffee lovers seem to know that a good "Cup of Joe" will work wonders, you can feel it! Not only can caffeine perk you up, but recent studies tout interesting health benefits from coffee.

A study released by the University of Scranton in Pennsylvania, reveals that coffee is America's Number 1 source of antioxidants. Antioxidants are important compounds that help the body protect itself from disease by slowing, preventing or stopping oxidation of molecules.

"Americans get more of their antioxidants from coffee than any other dietary source. Nothing else comes close," said the study leader Joe Vinson, Ph.D., Chemistry Professor from the University of Scranton. Professor Vinson spoke about fruits and vegetables being regularly promoted as good sources of antioxidants, however this new finding is the first time that coffee is shown to be the primary source.

Coffee is the source that most Americans get antioxidants from. Both caffeinated and decaffeinated versions of coffee appear to provide a similar antioxidant level.

For those who enjoy coffee and are excited about coffee as a source of antioxidants, Professor Vinson recommends drinking at least one cup of coffee per day.

It's not your imagination, so enjoy coffee! A decent cup of coffee improves your sense of well-being, energy, happiness, sociability and alertness, according to research at Johns Hopkins School of Medicine in Baltimore, Maryland. You have to drink coffee regularly, as having that unusual cup may cause anxiety and a feeling of being unwell.


Interestingly, the benefits of drinking coffee seem to be limited to the coffee itself. It's not the caffeine that's lowering the risk for stroke, there's something in the components of coffee itself.

"A cup of coffee is about 2% caffeine and 98% other stuff," says Terry Graham, chair of the nutritional sciences department at the University of Guelph in Ontario. The "other stuff" might easily include "another 50 or 100 active compounds," Graham says.

Among them are quinides, fats that are produced when coffee beans are roasted. Some studies suggest these fats may favorably affect blood-sugar control.  The consumption of larger amounts of coffee has been shown to reduce the incidence of Type 2 Diabetes.  
 
So, the question is, how can you enjoy coffee without losing sleep over it?  Three or four cups may seem like a lot, but this is not so if you're enjoying a regular brew.  Remember that some coffee can contain more caffeine than others.  Bold Coffee from Starbucks is like jet fuel compared to the regular brew you make at home.

So, enjoy coffee!  It has surprising health benefits, a great taste when properly prepared, a wonderful social tool, and for those who are particular about coffee, an event in the preparation.
